With frequent use, knives eventually will go dull. They need some tender loving care from time to time, to reset the edges and keep them functioning optimally.

These knives have seen better days. If you didn’t know better, you’re probably be inclined to just chuck them and buy new ones. But if you take a closer look, you’d see that they are made by Aritsugu (有次), a company founded by the renowned Kyoto swordsmith Fujiwara Aritsugu way back in 1560! They originally forged katana sword blades until the demand for swords dwindled and they transitioned to kitchen knives. So behind these seemingly almost worthless knives is a rich history of sword/knife-making tradition!
Our master sharpener, Peter Nowlan, works his magic on the knives and behold! the Aritsugu knives restored to their former glory! He does all sharpening and repair work by freehand so each knife gets his full attention. (No machine grinders!)
